I came across this classic by AA Gill in the Sunday Times this morning:-

But the reason I’m really commending this restaurant was something that was said. The Blonde asked our host if he was the owner of the restaurant. He looked at her and spread his hands as an offering and in astonishment. “As long as you sit here,” he rasped, “it is your restaurant. When I’m here on my own, it’s my restaurant.”

Every restaurateur in the world should have that embroidered on their pillows. It’s a perfect evocation of hospitality and maybe a little answer as to why Italy defies the laws of common sense. Its hospitality, while we’re there, belongs to all of us.
